What the closing crew never gets to

Your team wipes down, sweeps, mops and goes home. On a full Saturday that is all anyone has time for, and expecting more from a cook at the end of a twelve-hour day is how you lose the cook.

So the deep work waits. Grease behind the fryer bank and under the flat top. The wall behind the line and the ceiling above it. Equipment legs, casters and the floor underneath them. Cooler and freezer gaskets and shelving. Drain surrounds. Grout that has stopped being the colour it started as. None of it is urgent on any single night, which is exactly why it never gets scheduled.

Then a slow week finally arrives and you find out it has become a two-day job that will not fit into a slow week.

Three ways that catches up with you

Health inspection

Inspections are unannounced, results are public, and a guest can look yours up before deciding where to eat. A finding about grease accumulation or equipment and floor condition is entirely preventable, and in a small city it gets talked about for a long time.

Fire

Grease is fuel, and it does not only collect in the hood. It builds on the wall behind the line, on equipment housings, on the floor and in the seams between them. A kitchen fire is a bad night in the obvious way and a worse quarter in the less obvious one, because everything after the fire is closure and claims.

Insurance and equipment

Your insurer asks about kitchen cleaning at renewal, and asks harder after a claim. Meanwhile grease-loaded equipment runs hot, seals and gaskets go early, and you end up replacing a unit you could have kept for years.

  • Back of house: dish pit, prep areas, dry storage, walk-ins, receiving doors and staff washrooms
  • Exhaust work through our hood and vent service, so both sides of that system sit with one company on one file
  • A written scope and a booked schedule, which is the only reason deep cleaning ever actually happens

How often a kitchen needs this

  1. Nightly or several nights a week

    Closing support for kitchens that would rather have their cooks cooking. Floors, dish pit, surfaces and waste areas.

  2. Weekly

    Floor scrubbing, drains and drain surrounds, wall wash on the line, mat cleaning.

  3. Monthly

    Pull the equipment and clean behind and underneath it. Cooler and freezer interiors, shelving, walls up to the ceiling.

  4. Quarterly or seasonal

    Full deep clean including storage, ceilings where access allows, and the equipment that only comes apart properly once in a while.

  5. Hood and vent, on its own cycle
